    All your worries drift away and it’s just you, your friends and family, the soft sound of the waves and the gorgeous coastal scenery.

    The Caipirinha

    • ½ a lime, cut into four wedges
    • 2 teaspoons of brown sugar
    • 70ml cachaça – a spirit fermented from sugarcane juice
    • 1 cup of crushed ice

    Preparation: Place lime and sugar in a glass and muddle (use a wooden spoon if you don’t have a muddler). Fill the glass with crushed ice and pour in the cachaça. Garnish with a lime slice.

     

    The Margarita

    • 60ml tequila
    • 40ml cointreau
    • 30ml fresh lime juice
    • Ice
    • Salt
    • 1 lime wedge

    Preparation: Spread the salt onto a plate, rub the rim of the glass with the lime wedge and dip the rim into the salt to make it stick to the edge. Shake the tequila, cointreau, lime juice and ice until cold, and strain the cocktail into the glass over ice. Garnish with a lime slice.

     

    The Mai Tai

    • 45ml white rum
    • 20ml fresh lime juice
    • 15ml orange curaçao
    • 15ml orgeat syrup
    • 22ml dark rum
    • 1 cup crushed ice
    • 1 mint sprig

    Preparation: Shake all the ingredients (except the dark rum and mint sprig) in a cocktail shaker, strain into a glass over ice and float the dark rum onto the top. Garnish with the mint.

     

    The Pimm’s Cup

    • ½-inch-thick cucumber wheel
    • ½-inch-thick lemon wheel
    • ¼ of an orange, cut into wedges
    • 60ml Pimm’s No. 1
    • 120ml lemon-lime soda or ginger ale
    • A lemon skin twist

    Preparation: Muddle the cucumber, lemon and orange wedges in a chilled glass. Pour in the Pimm’s and soda and stir to combine. Top the glass with ice and garnish with the lemon twist.

     

    The Sex on the Beach

    • 45ml vodka
    • 15ml peach schnapps
    • 45ml pineapple juice
    • 45ml cranberry juice
    • 15ml chambord
    • 1 cup of ice cubes

    Preparation: Add all the ingredients into a cocktail shaker. Mix well and strain into a tall glass over fresh ice. Garnish with an orange wedge.

     

    The Piña Colada

    • 45ml white rum
    • 60ml coconut milk
    • 60ml fresh pineapple juice

    Preparation: Put all the ingredients into a shaker and add ice. Shake well and strain into a tall glass over fresh ice. Garnish with a cherry and a pineapple wedge.

     

    Then Limoncello Gin

    • 30ml limoncello
    • 30ml gin
    • 120ml club soda
    • 1 cup of ice

    Preparation: Fill a tall glass with ice and add the limoncello and gin. Top with the club soda and stir. Garnish with a lemon twist.

    The Classic G & T

    • 75ml dry gin
    • 2 lime wedges
    • 120ml tonic
    • 1 cup of ice

    Preparation: Fill a glass halfway with ice cubes and pour in the gin. Rub the lime wedges around the rim of the glass, squeeze some drops into the gin and add to the glass. Top with the tonic, stir and serve.

     

    The Swimming Pool

    • 1 scoop of crushed ice
    • 8ml sweet cream
    • 22ml coconut cream
    • 60ml pineapple juice
    • 22ml vodka
    • 45ml Bacardi rum
    • 13ml blue curacao

    Preparation: Shake all the ingredients (except the blue curacao) together, pour into a tall glass and float the blue curacao over the top.

     

    The Mojito

    • 15ml fresh lime juice
    • 1 teaspoon of superfine sugar
    • 4 mint leaves
    • 60ml white rum
    • Club soda

    Preparation: Muddle the lime juice, sugar and mint leaves in a tall glass. Fill the glass halfway with ice and add the rum. Throw in the squeezed lime shell and top with club soda.

     

    BONUS RECIPE: The Grapefruit Rosemary Mojito

    • 45ml white rum
    • 30ml simple syrup
    • 30ml of fresh red grapefruit juice
    • 2 sprigs of fresh rosemary
    • Club soda

    Preparation: In a tall glass, muddle the simple syrup, grapefruit juice and rosemary. Add the rum and fill the glass with ice. Top with club soda and garnish with a grapefruit wedge.
